Biscoff Banana Pudding - Banana Pudding With Biscoff Cookies

Ingredients
  

  • 4 organic bananas sliced
  • 1 11 oz. box organic vanilla wafer cookies
  • 1 8 oz. package Biscoff cookies, semi-crushed (some left whole, some crushed)
  • 2-3 cups whipped cream store-bought or homemade
  • Cookie Butter Vanilla Pudding:
  • 3 1 oz. boxes vanilla instant pudding mix
  • 2 Tbsps Biscoff cookie butter softened
  • 1 14 oz. can sweetened condensed milk
  • 3 cups VERY COLD filtered water or substitute with milk
  • 1 tsp vanilla extract
  • Pinch of ground cinnamon
  • Pinch of sea salt
Toppings
  • Whipped cream
  • Crushed Biscoff cookies
  • Crushed vanilla wafer cookies
  • Caramel sauce for drizzle (For homemade, see post!)

Method
 

Prepare the Pudding:
  1. In a large bowl, whisk together the vanilla instant pudding mix, sweetened condensed milk, and cold filtered water (or milk). Whisk until smooth, then add the softened Biscoff cookie butter. Continue to mix until the pudding is thick and creamy.
  2. Stir in vanilla extract, a pinch of cinnamon, and sea salt. Let the pudding sit in the fridge for about 5 minutes to thicken further.
Layer the Dessert:
  1. In a large serving dish (or individual cups if you’re feeling fancy), start by layering a few crushed vanilla wafers at the bottom.
  2. Add a layer of sliced bananas, followed by a layer of the cookie butter vanilla pudding.
  3. Crumble some Biscoff cookies on top, then repeat the layering process—vanilla wafers, bananas, pudding, and Biscoff cookies.
Top It Off:
  1. Spread a generous layer of whipped cream on top.
  2. Finish with crushed Biscoff cookies, crushed vanilla wafers, and a drizzle of caramel sauce.
Chill:
  1. Cover your pudding and let it chill in the refrigerator for at least 2 hours (overnight is best!) to allow the flavors to meld.
Serve:
